Good King Henry

Chenopodium bonus-henrius

HOW TO GROW GOOD KING HENRY

Good King Henry seed is notoriously difficult to germinate. We went through several batches, stratification methods until we cracked the code. For Zone 7b direct sow in deep flats of sterile potting soil or in the garden in mid-December. Try varied dates. Stratify in a 5-6” deep undivided flat outdoors for 12 weeks beginning in mid January, then bring indoors to germinate. You can also try 10 weeks in the fridge in Perlite or sand, then set under grow lights. The key is fresh seed. Unlike many other seeds, viable Good King Henry seeds float. Early plants have one tap root. Read our Blog ‘How to Germinate Your Seeds’. Soil pH 5.6-7.8. Hardiness zones 3-9. Perennial.

Usual seed life: 5 years.

Planting Depth 1/4”
Soil Temp. Germ. 60˚F stratify
Days to Germ. 70-80
Plant Spacing 12-18”
Row Spacing 24”
Days To Maturity 300
Part Shade, Moist Well Drained

Looks like a perennial spinach but is from a different genus and is not as sweet. Leaves are eaten fresh or lightly steamed. Our selection has a very slight pepper taste and is not bitter. The spring shoots harvest lasts up to three months, much longer than asparagus. If harvesting spring shoots, let the first 2-3 grow to maturity to encourage plant root growth and then harvest the subsequent shoots. Rich in vitamins C and A and calcium. Seeds are edible as a grain crop similar to Chenopodiums like Quinoa. Also known as Lincolnshire spinach and fat hen plant.

Old European vegetable primarily grown for its edible asparagus-type shoots. Until the 1900s, Good King Henry was commonly grown in English kitchen gardens. Delicious good king henry recipes.

Meet Your Farmer

We promote fair trade, organic practices and environmental responsibility throughout the Restoration Seeds supply chain. Below are the family farmers and seed suppliers who bring our open pollinated seeds to you.

Idyllwild Conventional Seed grower since 2018
Idyllwild was born of our joyful curiosity and celebration of nature’s diverse gifts. Following nature’s model of open dispersal and dissemination, we share these seeds with you and invite you to play in the garden of abundance. We learn from nature and she has taught us to live and think in terms of “abundance” instead of “scarcity”. Diversity - in all forms, from genetic to creative expression - is the heart of resilience. We enjoy experimenting with myriads of flavors, colors, and textures and the world opens to us in infinite possibilities. As a result, we are nourished in body, mind, and spirit.
