Native to Iran and Afghanistan. Related to parsley, fennel, dill and cumin which are grown for their aromatic leaves. Carrot is one of the most recently cultivated vegetable crops dating back a recently as the 10th century in Afghanistan. Early carrots were less refined than our modern varieties and were usually purple or yellow in color. European paintings of the 17th century show the earliest record of orange carrots. The orange carrot, a variant of yellow, stimulated a rush of carrot breeding in Northern Europe which led to day’s wide cultivation and modern carrot varieties.
